
Chorizo Stuffed Turkey Breast with Chipotle Bbq Glaze
Boneless turkey breasts are stuffed with a spicy chorizo and cornbread mixture, then roasted and basted with a smoky, sweet homemade Chipotle BBQ Glaze.
Ingredients
- 2 Turkey Breast Tenderloins, boneless skinless Cut to form a pocket for stuffing
- 1/2 lb Chorizo Sausage (bulk) or any sausage that you prefer May use 2 links instead & remove casing
- 1 Medium Onion chopped
- 1 Jalapeno finely chopped, optional
- 1 Tablespoon Fresh Oregano minced or 1 tsp dried oregano
- 1 Teaspoon Garlic minced
- 1/4 Cup Dry White Wine
- 1 1/2 Cups Cornbread Stuffing Mix
- 1 Cup Chicken Broth
- 1 Egg beaten
- Black Pepper to taste
Chipotle BBQ Glaze
- 1/4 Cup Ketchup
- 1/4 Cup Chili Sauce
- 1/4 Cup Dark Rum optional
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Molasses
- 1 Tablespoon Chipotle Chile Canned in Adobo minced, add more if you want spicier
- 1 Teaspoon Ground Coriander
Instructions
- Brown sausage in a medium-sized skillet over medium heat. Remove from skillet to drain on paper towels.
- Drain fat from skillet leaving 1 to 2 T. in the pan. Heat over a medium flame and add onion, jalapeno (if using) and garlic. Saute until onions are translucent, stir in oregano towards the end of saute time.
- De-glaze the pan with white wine and simmer for 4 – 5 minutes. Remove from heat. Mix in corn bread stuffing mix, chicken broth, egg, and black pepper.
- Fill each turkey breast with stuffing and place in a baking dish sprayed with non-stick cooking spray. Place extra stuffing in and around the turkey in the baking dish.
- Bake at 425 degrees F basting every 10 minutes with Chipotle BBQ glaze for 40 – 45 minutes or until instant read thermometer registers 165 when inserted into center.
Chipotle BBQ Glaze
- Combine all ingredients in a small saucepan. Simmer over low heat for 5 – 10 minutes or until slightly thickened.
