
Sweet Potato Salad
An innovative twist on potato salad! A colorful mix of roasted sweet potatoes, toasted walnuts, and dried cherries, all tied together with a honey lime dressing.
Ingredients
- 4 cups sweet potatoes peeled and cubed
- 1 tablespoon olive oil
- 1/2 cup chopped walnuts toasted
- 1/3 cup dried cherries chopped, may substitute dried cranberries
- 1/4 cup minced fresh parsley may substitute cilantro
- 2 tablespoons mayonnaise
- 2 teaspoons white vinegar
- 2 1/2 teaspoons lime juice
- 1 tablespoon honey add more if you like it sweeter
- 1/2 teaspoon grated lime zest
- 1/4 teaspoon salt
Instructions
- Place potatoes in a 15x10x1-in. baking pan coated with cooking spray. Drizzle with oil; toss to coat. Bake at 400° for 30-45 minutes or until tender. Cool to room temperature.
- In a large bowl, combine the walnuts, cherries, parsley (or cilantro) and potatoes.
- In a small bowl, combine the mayonnaise, vinegar, lime juice, honey, lime zest and salt. Pour over potato mixture and toss to coat.
