
Artichoke and Parmesan Cheeseburgers
These juicy burgers are topped with Lime Mayonnaise, Roasted Red Peppers and Chopped Spinach
Ingredients
- 1 pound ground beef
- 2 tablespoons bacon bits
- 14 ounces artichokes canned, drained, chopped
- 2 cloves garlic minced
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice fresh squeezed
- zest of 1 lemon
- 1/4 teaspoon paprika
- 1/4 cup shredded parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 cup jarred roasted red peppers drained, chopped
- 4 slices cheese of your choice American (used in photo), Provolone, etc.
- 1 cup fresh spinach chopped
- 4 whole hamburger buns ciabatta, if available
Lime Mayonnaise
- 1/3 cup mayonnaise
- zest of 1 lime
- 1 1/2 tablespoons fresh squeezed lime juice
- 1 tablespoon fresh cilantro chopped
- salt and pepper to taste
Instructions
- Place the ground beef in a large mixing bowl, add the bacon bits and chopped artichoke hearts; set aside
- In a small bowl mix together the garlic, 1 tbsp mayonnaise, lemon juice and zest, paprika, parmesan cheese, salt and pepper, and blend together well
- Add the cheese mixture to the ground beef mixture and mix together well with your hands; divide into 4 equal parts and shape into hamburger patties; set aside
- In a small bowl make the lime mayonnaise by combining the 5 tbsp mayonnaise, lime zest, lime juice, cilantro and black pepper; refrigerate until needed
- Heat grill to medium-high heat and cook hamburger patties 4-5 minutes on each side; top with cheese of choice until melty; transfer to a plate.
- Place burgers on bottom half of bun, top with generous tablespoon of lime mayonnaise and spread over cheese; place 2 tablespoons of chopped roasted red peppers over the mayonnaise, sprinkle chopped spinach on top of peppers.
- Top with the other bun half, serve and enjoy!
Notes
I served the burger open-faced on a piece of oatnut toast. In the ingredients, I list buns, with ciabata as my recommendation. I think the chewiness of ciabatta would be terrific with this burger, but I imagine any bun of your choice would be great! Also, because this burger can be messy, I like to cut it in half before serving (even open-faced).
