Banana Salsa

This sweet & spicy salsa is fantastic with grilled or broiled fish!

Ingredients
  

  • 3 medium medium bananas peeled and diced
  • 1/2 medium medium red bell pepper diced
  • 1/2 medium medium green bell pepper diced
  • 1 medium medium jalapeno pepper minced
  • 1 tbsp ginger grated
  • 3 whole whole green onions chopped fine
  • 1/4 cup fresh mint leaves chopped
  • 3 tbsp fresh lime juice
  • 2 tbsp light brown sugar
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Combine all of the ingredients in a mixing bowl and gently toss to mix.
  • Correct the seasonings, adding salt, lime juice or sugar to taste. The salsa should be a little sweet and a little sour, with a tiny bite.
  • This salsa is best when served within a couple hours after making it. Refrigerate, covered, until serving time.
