
Banana Salsa
This sweet & spicy salsa is fantastic with grilled or broiled fish!
Ingredients
- 3 medium medium bananas peeled and diced
- 1/2 medium medium red bell pepper diced
- 1/2 medium medium green bell pepper diced
- 1 medium medium jalapeno pepper minced
- 1 tbsp ginger grated
- 3 whole whole green onions chopped fine
- 1/4 cup fresh mint leaves chopped
- 3 tbsp fresh lime juice
- 2 tbsp light brown sugar
- 1 tbsp olive oil
- salt and pepper to taste
Instructions
- Combine all of the ingredients in a mixing bowl and gently toss to mix.
- Correct the seasonings, adding salt, lime juice or sugar to taste. The salsa should be a little sweet and a little sour, with a tiny bite.
- This salsa is best when served within a couple hours after making it. Refrigerate, covered, until serving time.
