Easy Chicken Loaf with Chicken Mushroom Gravy

You can put this dish together quickly, and while it's in the oven, knock out some homework with the kids.

Ingredients
  

For the Chicken Loaf

  • 2 cups canned chicken about 2 large cans
  • 3 eggs lightly beaten
  • 1/2 cup chicken broth
  • 4 tbsp bread crumbs
  • 1 tbsp parsley

For the Gravy

  • 3 tbsp butter
  • 3 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups chicken broth
  • 4 oz canned mushrooms drained

Instructions
 

For the Chicken Loaf

  • Combine all ingredients and mix well. Pour mixture into a buttered 8″ loaf pan.
  • Place loaf pan in a shallow pan of water (1" deep) and bake at 350 for 40 – 50 minutes or till firm in the center.
  • While the loaf is in the oven, make the gravy.

For the Gravy

  • Melt butter slowly. Blend in flour and seasonings.
  • Add broth and cook till thick and smooth. Stir in mushrooms.

Notes

Serve this with store-bought mashed potatoes and microwave some frozen peas or broccoli for a complete meal.
