
Pecan Cloud Cookies
Delicately crisp on the exterior and sweetly chewy inside, these light, ethereal meringue cookies are studded with crunchy toasted pecans and just a hint of vanilla for a sophisticated, airy treat.
Ingredients
- 2 egg whites
- 1/8 tsp salt
- 2 cups powdered sugar sifted
- 1 tsp white vinegar
- 1 tsp vanilla
- 1½ cups pecans chopped
Instructions
- Beat the egg whites with salt on high speed until soft peaks form.
- Gradually mix in powdered sugar, vinegar, and vanilla.
- Continue to mix until very stiff. Fold in pecans.
- Drop by teaspoonfuls on a greased cookie sheet.
- Bake at 300° F for 15 – 20 minutes. You do not want these to brown!
Notes
If you’re making these for the Holidays – divide the cookie dough in half. Place a few drops of green food coloring in one half the dough and a few drops of red food coloring in the other. Mix each well before folding in the pecans.
