Peppermint Snowballs

A holiday twist on the classic snowball cookie, these will melt in your mouth and deliver a bright pop of peppermint flavor, all dusted in a delightful sugar and candy coating.

Ingredients
  

  • 1 Cup butter softened
  • 1/2 Cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 2 1/4 Cups flour
  • 1/2 teaspoon salt
  • 20 peppermint candies crushed
  • 3/4 Cup powdered sugar
  • 1 or 2 drops Red Food Coloring optional

Instructions
 

  • Heat oven to 350 degrees F
  • In a large mixing bowl, beat butter until light and fluffy
  • Slowly add 1/2 Cup of powdered sugar and both extracts. Combine well on low-medium speed.
  • Add flour and salt. Mix well.
  • Place dough in refrigerator and chill for 20 minutes. Do not overchill!
  • Roll dough into 1 inch balls and place on a buttered cookie sheet about an inch apart.
  • Bake for 20 minutes or until golden brown. Remove and allow to cool for 5- 10 minutes.
  • In the meantime, place crushed candies and remaining powdered sugar into separate bowls.
  • Working quickly, roll cookies in powdered sugar then candies.
