
Peppermint Snowballs
A holiday twist on the classic snowball cookie, these will melt in your mouth and deliver a bright pop of peppermint flavor, all dusted in a delightful sugar and candy coating.
Ingredients
- 1 Cup butter softened
- 1/2 Cup powdered sugar
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- 2 1/4 Cups flour
- 1/2 teaspoon salt
- 20 peppermint candies crushed
- 3/4 Cup powdered sugar
- 1 or 2 drops Red Food Coloring optional
Instructions
- Heat oven to 350 degrees F
- In a large mixing bowl, beat butter until light and fluffy
- Slowly add 1/2 Cup of powdered sugar and both extracts. Combine well on low-medium speed.
- Add flour and salt. Mix well.
- Place dough in refrigerator and chill for 20 minutes. Do not overchill!
- Roll dough into 1 inch balls and place on a buttered cookie sheet about an inch apart.
- Bake for 20 minutes or until golden brown. Remove and allow to cool for 5- 10 minutes.
- In the meantime, place crushed candies and remaining powdered sugar into separate bowls.
- Working quickly, roll cookies in powdered sugar then candies.
