
Roasted Radishes in a White Miso, Lime and Fresh Thyme Marinade
Who knew that radishes would transform when they're roasted?!? Delish!!
Ingredients
- 3 tablespoons olive oil
- 2 tablespoons white miso paste
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh thyme chopped fine
- 1/2 teaspoon ground black pepper
- 1 tablespoon honey
- 3 bunches radishes cleaned, trimmed, and halved
Instructions
- Pre-heat the oven to 425F Line a baking sheet with parchment paper.
- In a medium bowl, whisk the olive oil, miso, thyme, lime, honey and the pepper together until completely mixed and ingredients distributed evenly.
- In a gallon resealable plastic bag, add radishes.
- Add the marinade to the bag. Seal the bag and shake the bag to coat the radishes evenly with the marinade. Remove radishes one-by-one and place on parchment-lined baking sheet until all are on sheet, cut side down.
- Place in oven and bake until tender, 20-25 minutes, depending on the size of the radishes. A knife should be able to go in without much resistance.
- Remove and place onto a platter.
Notes
They are best hot, out of the oven. They are also good refrigerated to snack on or tossed in a salad!
