Roasted Radishes in a White Miso, Lime and Fresh Thyme Marinade

Who knew that radishes would transform when they're roasted?!? Delish!!

Ingredients
  

  • 3 tablespoons olive oil
  • 2 tablespoons white miso paste
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh thyme chopped fine
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon honey
  • 3 bunches radishes cleaned, trimmed, and halved

Instructions
 

  • Pre-heat the oven to 425F Line a baking sheet with parchment paper.
  • In a medium bowl, whisk the olive oil, miso, thyme, lime, honey and the pepper together until completely mixed and ingredients distributed evenly.
  • In a gallon resealable plastic bag, add radishes.
  • Add the marinade to the bag. Seal the bag and shake the bag to coat the radishes evenly with the marinade. Remove radishes one-by-one and place on parchment-lined baking sheet until all are on sheet, cut side down.
  • Place in oven and bake until tender, 20-25 minutes, depending on the size of the radishes. A knife should be able to go in without much resistance.
  • Remove and place onto a platter.

Notes

They are best hot, out of the oven. They are also good refrigerated to snack on or tossed in a salad!
