
Billion Dollar Chicken Casserole
You've heard of Million Dollar Casseroles? Well, this one is a BILLION Dollar Casserole because it's just that tasty!
Ingredients
- 2 Cups White Rice cooked
- 4 Cups Chicken Breast cooked & shredded
- 4 oz Cream Cheese softened
- 1/2 Cup Cottage Cheese large curd
- 1 10½ oz can Cream of Chicken Soup
- 1/2 Cup Chicken Sauce
- 1/2 Cup Cheddar Cheese shredded
- 1/4 Cup Harissa, mild
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
For the Topping
- 1 sleeve Ritz Crackers crushed
- 1/4 Cup Butter melted
- 1 Cup Sharp Cheddar Cheese shredded
- 5 slices Bacon cooked crisp & crumbled
Instructions
- Store cooked rice in covered container until ready to use
- For the chicken, poach 3 boneless, skinless chicken breasts until fully cooked. Cool until you can handle to shred. Store in a covered container until ready to use.
- In a large bowl, cream the cream cheese. Add cottage cheese and blend well.
- Add cream of chicken soup and blend well with the cream cheese mixture.
- Add cheddar cheese through pepper and combine all ingredients well.
- Add chicken and make sure chicken is mixed well with the liquid ingredients.
- Spray a 9×9-inch baking dish with cooking spray.
- Spread rice to cover the bottom of pan evenly
- Over rice, pour chicken mixture, spreading evenly.
To prepare Topping
- Mix crushed Ritz Crackers with melted butter.
- Add shredded cheddar cheese and bacon and mix well.
- Sprinkle topping mixture evenly over chicken layer
Bake
- Cover pan with aluminum foil and place in a 350° oven for 30 minutes.
- Remove from oven, remove foil and put back in oven another 15 minutes until topping is golden brown and casserole registers at least 165°
- Let cool at least 20 minutes before serving.
