Store cooked rice in covered container until ready to use
For the chicken, poach 3 boneless, skinless chicken breasts until fully cooked. Cool until you can handle to shred. Store in a covered container until ready to use.
In a large bowl, cream the cream cheese. Add cottage cheese and blend well.
Add cream of chicken soup and blend well with the cream cheese mixture.
Add cheddar cheese through pepper and combine all ingredients well.
Add chicken and make sure chicken is mixed well with the liquid ingredients.
Spray a 9x9-inch baking dish with cooking spray.
Spread rice to cover the bottom of pan evenly
Over rice, pour chicken mixture, spreading evenly.
