Cajun Potato Soup

Cajun Potato Soup

Woooo-weee! This spicy potato soup will make you dance on Fat Tuesday!!
Servings 1 gallon

Ingredients
  

  • 1 lb Bacon diced
  • 2 lb Andouille or Smoked Sausage cut into rounds
  • 2 sticks butter
  • 1 1/2 onions diced
  • 1 cup celery diced
  • 1 red bell pepper seeded & diced
  • 2 tbsp garlic minced
  • 1/2 Cup flour
  • 10 potatoes peeled & diced
  • 48 oz chicken broth
  • 1 cup heavy cream
  • 3 cups whole milk
  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Onion Powder
  • 1/2 – 1 tbsp Cajun Seasoning to taste
  • 1 tsp Black Pepper
  • 1 tbsp Dried Parsley
  • Salt to taste

Instructions
 

  • Cook Bacon & Sausage in a large pot. Remove to a bowl lined with paper towels when brown and crispy.
  • Add Butter and Onion, Celery, and Bell Pepper. Cook until onions are translucent. Add garlic and cook 1 minute. Whisk in Flour and cook 1 to 2 minutes.
  • Add diced Potatoes, Chicken Broth, Heavy Cream, Whole Milk, garlic powder, onion powder, cajun seasoning, black pepper, & parsley. Cover and cook until potatoes are fork tender.
  • Use a potato masher to mash a few of the potatoes. Taste and add salt (other seasonings) to taste. Cover and cook for 30 minutes.
  • Add bacon & sausage. Heat until meat is warmed through.
