Cook Bacon & Sausage in a large pot. Remove to a bowl lined with paper towels when brown and crispy.
Add Butter and Onion, Celery, and Bell Pepper. Cook until onions are translucent. Add garlic and cook 1 minute. Whisk in Flour and cook 1 to 2 minutes.
Add diced Potatoes, Chicken Broth, Heavy Cream, Whole Milk, garlic powder, onion powder, cajun seasoning, black pepper, & parsley. Cover and cook until potatoes are fork tender.
Use a potato masher to mash a few of the potatoes. Taste and add salt (other seasonings) to taste. Cover and cook for 30 minutes.
Add bacon & sausage. Heat until meat is warmed through.
