
Stuffed Mushroom Casserole
Love stuffed mushrooms? This casserole is sure to satisfy. It's not only a delicious vegetarian main dish, but it's great as a side dish too!
Ingredients
- 2 tbsp Oil
- 1.5 lbs Mushrooms washed & quartered
- 1 medium Onion diced
- Salt & Pepper to taste
- 4 cloves Minced Garlic
- 6 oz Cream Cheese cubed
- 1/2 cup Mozzarella shredded
- 3/4 cup Italian Bread Crumbs
- 1/2 cup Grated Parmesan
- 3 tbsp Fresh Parsley can substitute w/1 tbsp dried parsley
- 1 1/2 tbsp Butter melted
Instructions
- Preheat oven to 350°F
- Add oil to a large skillet and bring to medium heat.
- Sauté mushrooms and onions until softened and most of the liquid has cooked off.
- Add garlic to the skillet and cook until fragrant, approximately 1 minute
- Stir in cubed cream cheese until mushrooms are evenly coated.
- Remove skillet from heat and mix in mozzarella, 1/2 C bread crumbs, and 1/4 C parmesan cheese.
- Transfer to a prepared 8×8 baking dish.
- In a small bowl, combine parsley, melted butter, remaining 1/4 C parmesan cheese, and remaining 1/4 C bread crumbs. Sprinkle over top of mushrooms.
- Bake until topping is golden brown, 25 to 30 minutes.
Notes
This dish is simply great as-is! BUT I’d encourage you to try adding some cooked Italian Sausage or even Shrimp to turn it into a main dish casserole.
