Stuffed Mushroom Casserole

Love stuffed mushrooms? This casserole is sure to satisfy. It's not only a delicious vegetarian main dish, but it's great as a side dish too!

Ingredients
  

  • 2 tbsp Oil
  • 1.5 lbs Mushrooms washed & quartered
  • 1 medium Onion diced
  • Salt & Pepper to taste
  • 4 cloves Minced Garlic
  • 6 oz Cream Cheese cubed
  • 1/2 cup Mozzarella shredded
  • 3/4 cup Italian Bread Crumbs
  • 1/2 cup Grated Parmesan
  • 3 tbsp Fresh Parsley can substitute w/1 tbsp dried parsley
  • 1 1/2 tbsp Butter melted

Instructions
 

  • Preheat oven to 350°F
  • Add oil to a large skillet and bring to medium heat.
  • Sauté mushrooms and onions until softened and most of the liquid has cooked off.
  • Add garlic to the skillet and cook until fragrant, approximately 1 minute
  • Stir in cubed cream cheese until mushrooms are evenly coated.
  • Remove skillet from heat and mix in mozzarella, 1/2 C bread crumbs, and 1/4 C parmesan cheese.
  • Transfer to a prepared 8×8 baking dish.
  • In a small bowl, combine parsley, melted butter, remaining 1/4 C parmesan cheese, and remaining 1/4 C bread crumbs. Sprinkle over top of mushrooms.
  • Bake until topping is golden brown, 25 to 30 minutes.

Notes

This dish is simply great as-is! BUT I’d encourage you to try adding some cooked Italian Sausage or even Shrimp to turn it into a main dish casserole.
