Stuffed Mushroom Casserole
Love stuffed mushrooms? This casserole is sure to satisfy. It's not only a delicious vegetarian main dish, but it's great as a side dish too!

washed & quartered

Onion
diced
Salt & Pepper

Minced Garlic

Mozzarella
shredded

Italian Bread Crumbs

Grated Parmesan

Fresh Parsley
can substitute w/1 tbsp dried parsley

Instructions
Preheat oven to 350°F
Add oil to a large skillet and bring to medium heat.
Sauté mushrooms and onions until softened and most of the liquid has cooked off.
Add garlic to the skillet and cook until fragrant, approximately 1 minute
Stir in cubed cream cheese until mushrooms are evenly coated.
Remove skillet from heat and mix in mozzarella, 1/2 C bread crumbs, and 1/4 C parmesan cheese.
Transfer to a prepared 8x8 baking dish.
In a small bowl, combine parsley, melted butter, remaining 1/4 C parmesan cheese, and remaining 1/4 C bread crumbs. Sprinkle over top of mushrooms.
Bake until topping is golden brown, 25 to 30 minutes.
Notes
This dish is simply great as-is! BUT I'd encourage you to try adding some cooked Italian Sausage or even Shrimp to turn it into a main dish casserole.
