Penuche Chews

Here's an old family recipe. They taste of butter and brown sugar with each satisfying, chewy bite.

Ingredients
  

  • 2 Cups Flour
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 3/4 Cup Butter
  • 1 1/2 Cups Brown Sugar
  • 1/2 Cup Milk
  • 1 Cup Sifted Powdered Sugar
  • 1 Cup Pecans chopped
  • 1 Teaspoon Vanilla

Instructions
 

  • Sift together in a small bowl flour, salt, and baking soda. Set aside.
  • Add butter, brown sugar and milk to a saucepan. Bring to a boil, stirring constantly for 1 minute. Remove from heat and stir in powdered sugar, pecans and vanilla.
  • Add flour mixture to saucepan and mix well. Pour into two 9-inch baking pans lined with parchment paper. Don't skip the parchment paper!
  • Bake at 375 degrees F for 25 - 30 minutes. DO NOT OVERBAKE!
  • Cut into bars while still warm.

Notes

The word Penuche can be found in both Spanish and Italian kitchens. In Spanish, it comes from the word Panocha, which means 'raw sugar'. In Italian, it refers to a brown sugar fudge.
