Picnic Squares

These are tasty anytime - straight out of the oven, cold, or at room temperature. Great for when you're travelling or going on a picnic!

Ingredients
  

  • 1 17 oz box frozen puff pastry thawed
  • 12 slices mozzarella cheese divided
  • 6-8 slices deli ham
  • 6-8 slices deli turkey
  • cup mayo
  • 1 tablespoon stone ground mustard
  • 1 cup sun-dried tomatoes in oil drained
  • cup sliced red onion
  • 1 cup spinach roughly chopped
  • 1 egg beaten

Instructions
 

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • Unroll thawed puff pastry and use a rolling pin to roll the dough out so it is slightly thinner and larger in size.
  • Place one sheet of dough on the prepared baking sheet and use a sharp knife to score a border 1 inch from the edge of the sheet on all sides.
  • Bake sheet for 10-12 minutes or until puffed and golden.
  • As pastry bakes, mix together mayo and mustard in a small bowl. Set aside.
  • After initial bake, allow cooked pastry to cool slightly, then press down the middle to flatten it.
  • Layer the fillings: start with 6 slices of cheese, then the meats. Spoon mayo mixture over the meat and spread all over. Sprinkle on sun-dried tomatoes, red onion, and spinach.
  • Place second sheet of pastry dough on top and use a fork to crimp the edges together.
  • Brush top of dough with the beaten egg.
  • Bake for 20-25 or until top is golden brown.
  • Serve warm or chilled.
  • If you're taking this on the road, refrigerate before cutting into portions.

Notes

You can make this ahead of time & refrigerate. When ready to travel, cut into squares and wrap in wax paper.
Don't be afraid to try different meat combinations and other vegetables, such as roasted red peppers, pickled onions, basil, or arugula.
